Brazilian cuisine: How to cook Vatapa Fish Soup with Coconut Milk


For the recipe you need:

* Brazilian palm - 3 tbsp
* Onion - 1 pc.
* Garlic - 3 cloves
* Ginger - 1 tbsp
* Chilli - 4 small pieces.
* Tomatoes - 6 pcs.
* Juice of two limes
* Meat shrimp - 1 / 3 cup
* Peanut butter or cashew - 1 / 3 cup
* Chicken broth - 2 cups
* Coconut milk - 2 cups
* Coriander leaves - half a small beam
* Salt - 1 tsp
* Tabasco sauce to taste
* Fish fillets - 900g
* Meat cooked shrimp and dried - 450g

Serving:

* A few sprigs of coriander and 2 lime, sliced.

In a large saucepan, heat the palm oil and fry onions, garlic, ginger and chilli for 10 minutes. Then add tomatoes, lime juice, minced dried shrimp meat and peanut butter. Fry all of 1 minute. Gradually add chicken broth. To the resulting thick mixture add the coconut milk and other spices.

At the bottom of a deep frying pan pour oil and put a fish fillet. Frying pan set on a moderate fire and when the oil heats up, pour the fish with the mixture. Saute about 8 minutes in the second third of the cooking add the meat and shrimp. Ready soup with chunks of fish arrange on plates and garnish with slices of lime and coriander.
